Ingredients:

  • FLOUR                               500 gms

  • YEAST                                 7 .5 gms

  • SUGAR                               20 gms

  • SALT                                    11 gms

  • RED CHILLI POWDER 1 tspn

  • FAT (any will do)                 30 gms

  • SPINACH PUREE                 200 gms

  • MINCED GARLIC                 25-30 gms

  • WHEY WATER                     50 ml

  • HOT WATER (not boiling) 100 ml

HOW TO MAKE 

 

  • Whey water - take 1 tspn of curd, and add in 50 ml of water, mix well.

  • Spinach Puree - Put 200 gms of Spinach leaves in boiling water, leave to cool, grind to a fine paste.

 

METHOD

  • Sieve the flour, make a well.

  • Pour in the yeast, sugar, warm water, and start kneading.

  • Add in the whey water, spinach puree. Minced garlic ,red chillies powder, once kneaded, add the salt ,and keep kneading very well.

  • Check the formation of gluten, by making a window pane, and stretching the dough in between your fingers.

  • Once Gluten is formed, cover the dough and leave to rest for 30 minutes

  • Knock back the dough, and again leave for 10 mins.

  • Now, mould the dough , and arrange it carefully in a bread mould.

  • Leave to rise to 1 ½ times, and place in a preheated oven at 170 for 30 minutes.

  • Once baked, invert the bread onto a cooling rack, and leave to cool for 4 hrs at least.
